Catalog: re-pin entropicmem to 2.8.1 (7e02412)

Safety patch on 2.8.0:
- ingest re-validates every redirect hop
- vector embeddings opt-in (no silent model download)
- CLI honours HERMES_HOME for shared store
- duplicate hooks: list removed
- README lists every network touchpoint
- states native Windows unsupported on 2.8.x

Tools and hooks unchanged (7 and 5, same names).
No history rewritten; v2.8.0/060063d remain.
