teknium1 07aad347be test(profiles): bind the fake gateway_windows on the package too (#97897 class) ...

`from hermes_cli import gateway_windows` resolves the package attribute before
sys.modules, so after another test imported the real module the fake was bypassed
and the union run failed with "gateway_windows is Windows-only".
