r2 quality Low: _infer_like_recovery was a hand copy of pass 1 of
map_lost_and_found_rows (classify -> LayoutEvidence.add ->
infer_physical_layouts). The test therefore checked a copy of the
production loop, and would stay green if pass 1 changed. Write the
sessions rows into a schema-less lost_and_found table, the way
test_session_recovery_lost_and_found._map_salvage_rows does, and call the
real map_lost_and_found_rows. Then assert every row is mapped, none hit
unrecognized_layout_rows, and the inferred layout is the physical column
order. Still red with the base prod files (29 of 38 sessions mapped).
