alt-glitch 5b345904ab docs: escape <machine> so the docs site builds ...

MDX reads a bare <machine> as an unclosed JSX tag. #129646 left two of them in prose (onboarding-recommendations.md, the setup_choose row in tools-reference.md), and the Docusaurus build fails on onboarding/next. Write them as &lt;machine>, the form the generated skill pages use.
